My name is Jairo Cordero and I wanted to share with you the story of how I became a chef.

I was born in  Costa Rica and grew up in a mountain, specifically in a little town called Naranjal, located 30 minutes away from Nosara downtown. I grew up in a very natural and organic way. I was lucky to live in the fields, with cows, horses chickens, and pigs, and blessed to grow our own food. We had no electricity in town at that time and no grocery shops nearby, but on our property, we had all the food we could ask for whenever we wanted and a cocina of fuego a la Lena.

My passion for food started at a very young age as I saw my mom cooking for us, a family of five,  making all different types of typical meals from Guanacaste such as arroz con leche, arroz con pollo, pollo con papas, picadillos of all kinds, rosquillas, chicheme, tamales, pozol , frito, patacones and many more.

I remembered all the colors, flavors, and smells in every meal she prepared.  I admired the way she cooked, she made it seem so simple, she always carried herself in the kitchen with confidence and security. She was the main cook at the Local School in Naranjal and she cooked daily for 80 kids. Since then, food has always been an important part of my life.

I left Naranjal at the age of fifteen and moved to Nosara, looking for a better work opportunity. I wanted something different. I first got a job washing dishes at Harbor Reef and then at Harmony, my main goal was to experience something different than living in the fields. I always paid close attention to how they prepared and cooked every meal in the restaurant.

One day, in Harmony they decided to train me for 3 days to make sushi and this was the start of a big change in my life.  I still remember this day like yesterday, the main chef left for rest because it was low season and he didn’t think that people were coming but to my surprise, a table of 20 persons arrived. Suddenly, I passed from the guy that washed dishes to the one preparing food for the whole table and even though that when I look back at this day, I see it as a disaster, I have to say that nobody complained about my food and  everybody actually liked it.,

After this day, I was quickly name sub-chef at Harmony and worked next to one of the best chefs of Costa Rica, Marco Leiva, who is the current owner of Furca restaurant. Marco not only became a good friend but also a teacher for me  and thanks to him I developed a sense of confidence and creativity  the kitchen

Years after and 3 restaurants later, I decided to focus on doing what I love the most: cooking at people’s  Homes. I also specialized in cooking for events and making sushi. Now I can proudly say it’s been 15 years since I have been blessed to cook for many NOSARA  families and foreigners traveling to our lovely town and it will be an honor to cook for you too.

In my Kitchen, I let  go of norms, recipes, amounts, and ounces,  I flow with my instinct,  blessing the food to create the most heavenly meal you can imagine

My food is not only made with love, is also made with conscious, I call it:  FOOD with PURPOSE.
